Cheesy Bacon Hashbrown Casserole

I am really happy with how this turned out! It was pretty easy to make and tasted amazing great! Great for a weekend breakfast for the family!Enjoy!

Ingredients:

  • 4 slices of bacon, chopped
  • 1/2 onion or 1/4 tsp onion powder
  • 3 large eggs
  • 1/3 cup whole milk
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp seasoning salt
  • 3 cups frozen hashbrowns, thawed
  • 1 1/2 cups mexican blend cheese

Instructions:

  1. Preheat oven to 375 degrees Fahrenheit.
  2. In a 8 or 9 inch cast iron skillet, cook the bacon until crispy and then remove to paper towel lined plate.
  3. If you’re using an actual onion in stead of onion powder, cook them in the bacon grease until soft and translucent, about 4 minutes.
  4. In a large bowl, whisk together eggs, milk, salt, pepper, seasoning salt, and onion powder (only as a substitute for onion). Stir in the hashbrowns, bacon, cheese and cooked onion (if using).
  5. Make sure the cast iron is well greased with bacon grease, if not supplement with cooking spray.
  6. Pour in your casserole mix and spread evenly. Bake until crispy, about 30-35 minutes.
  7. Remove from oven and let cool before enjoying!
