
I am really happy with how this turned out! It was pretty easy to make and tasted amazing great! Great for a weekend breakfast for the family!Enjoy!
Ingredients:
- 4 slices of bacon, chopped
- 1/2 onion or 1/4 tsp onion powder
- 3 large eggs
- 1/3 cup whole milk
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp seasoning salt
- 3 cups frozen hashbrowns, thawed
- 1 1/2 cups mexican blend cheese
Instructions:
- Preheat oven to 375 degrees Fahrenheit.
- In a 8 or 9 inch cast iron skillet, cook the bacon until crispy and then remove to paper towel lined plate.
- If you’re using an actual onion in stead of onion powder, cook them in the bacon grease until soft and translucent, about 4 minutes.
- In a large bowl, whisk together eggs, milk, salt, pepper, seasoning salt, and onion powder (only as a substitute for onion). Stir in the hashbrowns, bacon, cheese and cooked onion (if using).
- Make sure the cast iron is well greased with bacon grease, if not supplement with cooking spray.
- Pour in your casserole mix and spread evenly. Bake until crispy, about 30-35 minutes.
- Remove from oven and let cool before enjoying!
