
Since staying home and raising my two beautiful babies, I’ve become a lot more aware of what food is in our house and what ingredients are in our food. Now, with the time I have at home, I’ve switched to trying to make homemade versions of staples in our house
Snuggle up and make some hot cocoa to go with these yummy homemade marshmallows! While I think cocoa has to have marshmallows, I’ve never been a huge fan of them by themselves when bought from the store. These easy 5 ingredient marshmallows are perfect for cocoa, s’mores, and you can even whip it for less time to create marshmallow fluff!
Ingredients:
- 1/2 cup boiling water
- 14 oz. Unflavored Gelatin
- 1/2 cup water
- 1 1/2 cups sugar
- 1-2 tsp vanilla extract
- Powdered sugar to coat
Directions:
- Place powdered gelatin into a small bowl and add 1/2 cup boiling water and stir until gelatin is fully dissolved. Set aside.
- In small sauce pan, add 1/2 cup water and 1 1/2 cups sugar to create a simple syrup. Stir and let boil until the ttemperature reaches 240 degrees Fahrenheit. Remove from heat.
- Carefully pour sugar syrup mixture into the bowl of stand mixer along with the gelatin mixture and add 1-2 tsp vanilla. Whisk on high for 10-12 minutes or until medium still peaks form.
- Prepare a 8×8 or 9×9 square baking dish with parchment paper. Spring some powdered sugar lightly on the parchment and then dump the marshmallow fluff mixture on top. Spread as best you can using the spatula. To help with a more even and controlled spread, you can run fingers under cold water to press the marshmallow around.
- Lightly powder the top of the marshmallows and let sit for 2 hours.
- Cut marshmallows to whatever size you prefer using a greased knife. After cutting you can roll sticky sides of marshmallow in the powdered sugar as well and enjoy!
