B is for Brown Sugar Garlic Chicken

Today is one of those days where you get more than one recipe for a letter! Earlier today I made brussel sprouts and tonight for dinner I tried a recipe I’ve had my eye on but wasn’t sure how it would go! This Bacon Brown Sugar Garlic Chicken was a hit and tasted amazing! Perfect balance of sweet and savory! I hope you enjoy!

Ingredients:

  • 6 (4 oz) boneless chicken breasts (I just used 2 really big ones for us.)
  • 2/3 cups brown sugar, packed
  • 2 tbsp minced garlic
  • 3/4 tsp kosher salt
  • 1/2 tsp pepper
  • 8-12 slices of bacon

Instructions:

  1. Preheat oven to 375 degrees and cover a baking sheet that has a lip with foil and set aside.
  2. In a medium bowl combine brown sugar, garlic, kosher salt, and pepper and mix until well combined. Because I used pre-minced garlic- it added some liquid which made it easier to work with.
  3. Coat chicken breasts using the brown sugar mixture but still leaving some in the bowl.
  4. Wrap bacon slices around chicken breasts and place on foil lined pan. Rub the remaining brown sugar mixture on the tops of the bacon wrapped chicken.
  5. Place in oven for 25 minutes or until cooked through and browned.
  6. Remove from oven and drain juices/liquids off foil. At this point I went ahead and removed my foil and moved the chicken right onto the pan since there was a lot of burnt mixture on the foil. You can do the same or replace it with new foil.
  7. Finally, I put the chicken back in the oven for about 5 minutes on high broil to crisp the bacon and then removed and let sit for a few minutes before serving. **Keep a very close eye so you don’t burn anything.
