A is for Avocado Brownie Bites

So excited!!! Welcome to my first official post of my ABC’s in the Kitchen! I sent the husband to the store the other day and he got me some avocados. Now I know some of you are probably seeing this and cringing because who the heck would put an avocado in brownies?! I thought the exact same thing when I saw it but figured I would try it and be adventurous! They are actually REALLY good and fudgy and you cannot taste the avocado at all! If you’re adventurous enough to try this like me, I hope you enjoy!

Ingredients:

  • 2 ounces semisweet chocolate chips
  • 2 tbsp vegetable oil
  • 2 whole ripe avocadoes
  • 2 cups granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 3 eggs, beaten
  • 1 tsp vanilla extract
  • 1/2 cup all purpose flour
  • 1/4 tsp salt

Instructions:

  1. Preheat oven to 350 degrees and spray or line 2 muffin tins.
  2. Start by putting chocolate chips and oil in a microwave safe bowl. Microwave for 30 second intervals until smooth and set aside.
  3. Cut avocados in half, remove pit, and scoop into a medium bowl. Discard outer peel and pit.
  4. Mash avocado and then whisk it until smooth and creamy.
  5. Pour in the chocolate mixture and whisk until fully combined.
  6. Next, add sugar, cocoa powder, and eggs and whisk until smooth.
  7. Add flour and salt and mix with a wooden spoon instead of a whisk.
  8. Using a large spoon or cookie dough scoop, add some batter to each spot on the muffin tin.
  9. Bake for 20-25 minutes or until toothpick comes out mostly clean. Let sit in pan for about 5 minutes before removing to plate or cooling rack! Enjoy!
