
So excited!!! Welcome to my first official post of my ABC’s in the Kitchen! I sent the husband to the store the other day and he got me some avocados. Now I know some of you are probably seeing this and cringing because who the heck would put an avocado in brownies?! I thought the exact same thing when I saw it but figured I would try it and be adventurous! They are actually REALLY good and fudgy and you cannot taste the avocado at all! If you’re adventurous enough to try this like me, I hope you enjoy!
Ingredients:
- 2 ounces semisweet chocolate chips
- 2 tbsp vegetable oil
- 2 whole ripe avocadoes
- 2 cups granulated sugar
- 1/2 cup unsweetened cocoa powder
- 3 eggs, beaten
- 1 tsp vanilla extract
- 1/2 cup all purpose flour
- 1/4 tsp salt
Instructions:
- Preheat oven to 350 degrees and spray or line 2 muffin tins.
- Start by putting chocolate chips and oil in a microwave safe bowl. Microwave for 30 second intervals until smooth and set aside.
- Cut avocados in half, remove pit, and scoop into a medium bowl. Discard outer peel and pit.
- Mash avocado and then whisk it until smooth and creamy.
- Pour in the chocolate mixture and whisk until fully combined.
- Next, add sugar, cocoa powder, and eggs and whisk until smooth.
- Add flour and salt and mix with a wooden spoon instead of a whisk.
- Using a large spoon or cookie dough scoop, add some batter to each spot on the muffin tin.
- Bake for 20-25 minutes or until toothpick comes out mostly clean. Let sit in pan for about 5 minutes before removing to plate or cooling rack! Enjoy!
