
This one right here is a real winner for an easy dinner! Perfect for picky eaters in the family, this one pan dish is amazing and sure to please everyone in the family. It is made up of very simple ingredients that you may already have sitting in your home! This recipe is one I got from my mom that she used to make occasionally so I decided to give it a shot for dinner tonight and it was husband approved! Hope you enjoy!
Ingredients:
- 1 can condensed cream of chicken
- 1 can full of whole milk
- 1 can full of water
- 3/4 cup uncooked rice
- 1/4 tsp paprika
- 1/4 tsp ground black pepper
- 3-4 boneless chicken breasts
- 1 cup mexican blend shredded cheese
Directions:
- Preheat oven to 375 degrees Fahrenheit.
- In a 2 quart shallow baking dish like the one pictured above, add rice, can of cream of chicken, milk, water, paprika, and ground pepper. I use the can from the cream of chicken to fill with milk and water.
- Using a whisk, make sure all ingredients placed in pan so far are well mixed and not lumpy.
- Cut chicken breasts in half long ways to ensure they aren’t too thick and then cut into what almost looks like chicken tender size strips.
- Place strips on top in pan and spread throughout.
- Cover pan with foil and bake in oven for 45 minutes.
- After 45 minutes, remove the foil and sprinkle the top with the mexican blend cheese and broil uncovered for about 5 more minutes or until the top is golden. Enjoy!
